Gambas al Ajillo (Shrimp in Garlic Chili Oil)

Peeled Shrimps in butter and chili oil

This tasty dish is famous in fine dining restaurants, is easy to make, and it's ~fancy~. If you're a shrimp lover, you'll love this recipe. Are you ready for it?

Ingredients

680g of E&L Shrimp

Salt to taste

1 1/4 cups of extra-virgin olive oil

1/4 cup of thinly sliced garlic

2 tsps. of red chili flakes

1 tsp. of grated lemon zest

1/2 cup of parsley, minced

2 tbsps. of dry sherry

1 tbsp. of lemon juice

Directions:

  1. In a bowl, toss the shrimp with a teaspoon of salt and let it sit for 10 minutes.
  2. In a 9–10-inch cast-iron skillet, heat the olive oil and garlic until fragrant. Let it cook for about 8-10 minutes over low heat. Add the chili flakes and stir for about 30 seconds, then add the shrimp.
  3. After stirring the shrimp for about 5 minutes, add the remaining ingredients. Season with salt. Let it sit for 5 more minutes until the shrimp is cooked.

Fish Fillet with Lemon Sauce

Fish Fillet with Lemon Sauce

You can always cook fish over meat if you feel a little different tonight. This recipe is delicious, a perfect alternative for steak or chicken; add some appetizers like a fresh green salad. Plus, it's good for your heart too!

 

Ingredients:

1 Cream dory fillet (cut in half or two regular sizes)

⅓ cup of pan-seared flour

2 tbsps. of butter 

1 tbsp. of olive oil

3 cloves of garlic, pressed or minced

½ cup of sherry

Lemon juice

Salt and pepper to taste

Fresh minced parsley for garnish

Half a lemon for garnish

Directions:

  1. Pat your fish dry and cover all sides with pan-searing flour. Set it aside.
  2. Melt the butter in a pan over medium-high heat. Add the olive oil.
  3. Make sure your pan is super-hot, then put the cream dory. Cook each side for about 2 minutes or until golden brown. Transfer the dory to a plate.
  4. In the same pan, add another butter and reduce the heat to medium. Sauté the garlic, then deglaze the pan with sherry. Add the lemon juice and salt and pepper. Simmer for two minutes, then add the dory to the lemon mixture.
  5. Cover for 5 minutes and uncover while simmering for another 5 minutes. Top with chopped parsley, and enjoy.

Parmesan Chicken with Broccoli

Chicken Parmesan with broccoli

You can never go wrong with chicken, so we're adding it to our top 5 list! Our main ingredients are Chicken breast and broccoli, so you are guaranteed that the dish is even more nutritious. 

Ingredients:

2 E&L Chicken Breasts (about 6 ounces each)

1/3 cup of panko

1/4 cup of Parmesan cheese, grated

4 tsps. of olive oil

Salt and pepper to taste

Lemon juice

1/2 tsp. of dried oregano

1 1/2 tbsp. plus 1/4 tsp. of Dijon mustard

2 cups of E&L Broccoli 

1/4 cup of low-fat plain yogurt

Lemon zest 

Directions:

  1. Combine the panko, parmesan cheese, 2 tbsps. of olive oil, oregano, salt, and pepper in a bowl. Pat the chicken breasts dry, then season with salt and pepper.
  2. Brush the chicken breasts with 1 ½ tbsps. of mustard, then cover all sides with the Panko-Parmesan mixture.
  3. In a separate bowl, coat the broccoli with 2 tsps. of olive oil, salt, and pepper.
  4. Preheat the air fryer to 190 degrees Celsius. Then cook the coated chicken for about 6 minutes, then flip to the other side. Add the broccoli around the sides of the chicken. Let it cook in the air fryer for about 8 minutes or until everything's done.
  5. In a small bowl, combine the remaining ingredients to form a mixture or a sauce. Serve hot.

Honey-Glazed Pork

Honey Glazed Pork

If you want to sweeten up your date night, try to cook this recipe! You don't need to be a chef or professional to cook this one. Best served with citrus juice or fresh fruits, this flavorful dish is also one of its own.  

Ingredients: 

4 E&L Pork Tenderloin (200g of pork cutlets)

1/3 cup of E&L Sweetener Honey

1/4 cup of light soy sauce

3 cloves of garlic, crushed

1 tbsp. of sesame oil

cilantro sprigs for garnish

Lemon wedges, for garnish

Steamed rice for serving

Directions: 

  1. Mix the honey, soy sauce, garlic, and 2 tbsps. of water in a bowl. Set it aside.
  2. Heat oil over medium-high heat, then add the pork. Cook for about 2-3 minutes on each side or until brown. Pour over the honey mixture.
  3. Cook for another 3 minutes until the honey sauce thickens.
  4. Sprinkle the glazed pork with coriander. Serve with hot steamed rice and garnish with lemon.
