Ingredients

  • 1 tablespoon of canola oil
  • 1 medium red pepper, seeded, cored, and cut into chunks
  • 1 thinly sliced onion
  • 3 cloves of minced garlic
  • 6 pieces of E&L Baby Sausages, sliced diagonally
  • 3 pounds of E&L Whole Chicken, cut into serving parts
  • 1 cup of pineapple juice
  • 1 cup of pineapple chunks
  • 1 cup of table cream
  • salt and pepper to taste

Instructions

  1. In a pot over medium heat, heat oil.
  2. Add the bell peppers and cook, stirring regularly, for about 30 seconds. Remove from the heat and pat dry with paper towels.
  3. Add the onions and garlic to the pan and cook until softened.
  4. Add the chicken and cook, stirring occasionally, until lightly browned.
  5. Add sausage and cook with the chicken.
  1. Add pineapple juice. Bring it to a boil, skimming off any scum that floats on top. Lower the heat, cover, and simmer until the chicken is tender.
  2. Add pineapples and table cream. Season with salt and pepper to taste.
  3. Continue to simmer for about 3 to 5 minutes or until the sauce is slightly thickened and reduced to the desired consistency.
  4. Add bell peppers and continue to cook for about 30 seconds or until tender crisp. Serve hot.
