Ingredients
- 1 tablespoon of canola oil
- 1 medium red pepper, seeded, cored, and cut into chunks
- 1 thinly sliced onion
- 3 cloves of minced garlic
- 6 pieces of E&L Baby Sausages, sliced diagonally
- 3 pounds of E&L Whole Chicken, cut into serving parts
- 1 cup of pineapple juice
- 1 cup of pineapple chunks
- 1 cup of table cream
- salt and pepper to taste
Instructions
- In a pot over medium heat, heat oil.
- Add the bell peppers and cook, stirring regularly, for about 30 seconds. Remove from the heat and pat dry with paper towels.
- Add the onions and garlic to the pan and cook until softened.
- Add the chicken and cook, stirring occasionally, until lightly browned.
- Add sausage and cook with the chicken.
- Add pineapple juice. Bring it to a boil, skimming off any scum that floats on top. Lower the heat, cover, and simmer until the chicken is tender.
- Add pineapples and table cream. Season with salt and pepper to taste.
- Continue to simmer for about 3 to 5 minutes or until the sauce is slightly thickened and reduced to the desired consistency.
- Add bell peppers and continue to cook for about 30 seconds or until tender crisp. Serve hot.
