2 tbsp of oil (cooking oil of your choice)
200g E&L Glazed ham, finely chopped.
4 garlic cloves, minced.
1 small red chilis, finely chopped (optional)

1 1/2 cup of E&L mixed veggies (carrots, corn and green peas)
4 cups (580g) cold, cooked rice
4 eggs, lightly beaten
1 1/2 tbs oyster sauce
2 tbs soy sauce
pepper and salt, to season
3 pcs of spring onions for garnish, thinly sliced.

Cooking Instruction:

1. Heat half the oil in a wok over high heat. Sauté the onion and garlic, until fragrant, then add the ham and cook for 1 minute or until brown. Add mixed veggies and cook for a further 1-2 minutes until softened. Transfer to a bowl and set aside.

2. Return wok to high heat and add remaining 1 tbs oil. Add rice, breaking up any large clumps with a spoon. Add the beaten eggs to combine with rice until cooked through. Add the oyster sauce, and dash of soy sauce for color and flavor. Incorporate the ham mixture to the wok and toss to combine and warm through. Season with salt and pepper and serve with spring onions for garnish.

And lastly, something new and fancy (just only by name though), the Ham & Cheese Potato Croquettes. Something unusual but very, very easy to make and surely a hit for all ages. This bite-sized snack is perfect anytime, any meal of the day, but usually aside from snack, it is best for appetizer boost and pick-a-food for parties.

Ingredients:

2 cups mashed potatoes
1 cup of E&L Glazed Ham, thinly sliced.
1 cup of ARLA Shredded Mozzarella Cheese
2 tablespoons thinly sliced chives
1/2 teaspoon garlic powder
1/2 cup all-purpose flour (plus more for your hands)
½ cup vegetable or canola oil for frying

Cooking Instruction:

1. For mashed potatoes: peel then boil the raw potatoes. Once cooked, mash the potatoes combining butter and milk as glue for the mash, then season with salt and pepper to taste and mix well

2. Add mashed potatoes, ham, cheese, garlic powder, chives and ½ cup flour to a large bowl. Stir together until combined.

3. Lightly flour your hands and divide the potato mixture into 16 small flat disks, about half an inch thick. TIP – use a cookie scoop to get perfectly even portions.

4. Heat oil in a pan and fry the croquettes in batches, flipping once, about 4 minutes per side until golden. Transfer to a paper towel lined plate. Do not crowd the pan; leave space between each croquette so they crisp all around.

5. Cool 5 minutes before serving.
