What you’ll need:
For the Jam
- 4 cups E&L Frozen Raspberry
- 2 cups granulated sugar
For the Jam Container
- Canning Jars
Cooking instructions:
- Thaw your E&L Frozen Raspberries.
- Combine the raspberries & sugar in a large stainless-steel pot. Cover them & sit overnight.
- Sterilize your canning jars by boiling for 10 to 15 mins in hot water bath.
- Mash the fruit & sugar mixture. Once done, place a plate in the refrigerator to chill for the gel test – to be used later.
- Once the gel test/texture is okay, time to boil your jam mixture using high heat, stirring occasionally.
- If foam forms on the surface, skim it off with a metal spoon. Continue to boil, stirring, until mixture reaches the gel point (about 20 mins).
- Let it cool down and get a spoon full of the jam & place it to the chilled plate (see no.4). and place it in the freezer for 2 mins. When you take it out, it should be properly gelled and & doesn’t run down the chilled plate.
- If your jam passed the gel test, you can now put it inside the sterilized jars leaving a ¼ inch headspace. Cover with canning lids & process in a boiling water bath for about 5 mins.
- Remove from the water bath and let drain on a towel-lined work surface.
- Serve and enjoy!
