Seafood Recipes to Try this Lenten Season

A time for reconnecting and getting deeper with God, Lent is an annual season Catholic devotees commemorate when Jesus fasted for 40 days in the desert.

It is typically observed from Ash Wednesday to Saturday before Easter (excluding Sundays). This year it starts from February 22 to April 6, 2023, and during this period, Catholics take time to pray, try not to eat meat, and fast, to pay tribute to the religious tradition.

As we reflect on this period, we have come up with seafood recipes that will help you if you’re trying to avoid meat. The following are seafood dishes that you can try cooking this Lenten season:

Fish Tacos

Fish Tacos

The more seasonings, the more flavorful it is! There are different versions of Fish Tacos out there, but here’s our favorite recipe.

 

Ingredients:

1.5 kilos E&L Cream Dory Fillet

Tortillas

1 avocado, diced

3 tbsp. of extra-virgin olive oil

1/2 tbsp. vegetable oil

2 tsp. of chili powder

1 tsp. of paprika

1/2 tsp. of ground cumin

1/2 tsp. of cayenne pepper

Lime juice

Salt and pepper

 

For the corn slaw:

1 tbsp. of E&L Sweetener Honey

¼ cup of mayonnaise

Lime juice

cilantro, chopped

2 cup of purple cabbage, sliced

1 canned corn kernel, strained

1 jalapeño, sliced

 

Sour cream, for serving

Lime wedges, for serving

 

Directions:

  1. In a bowl, mix the paprika, chili powder, cayenne pepper, cumin, olive oil, and lime juice. Put the E&L Cream Dory Fillet and coat it with the flavored mixture. Marinate for about 15 minutes.
  2. In a bowl, combine the corn slaw ingredients, including E&L Sweetener Honey, mayonnaise, and lime juice. Add on the purple cabbage, corn kernels, and jalapeño, then season with salt and pepper.
  3. Heat vegetable oil over medium-high heat. Season the marinated cream dory and start cooking in the pan. Once done, let them rest for 5 minutes, then scrap them with a fork or slice using a knife. Grill each tortilla, then assemble it with the fried cream dory fillet, sliced avocados, and corn slaw. Top with sour cream and serve with lemon wedges.

Broccoli Shrimp Alfredo

Broccoli Shrimp Alfredo

This Broccoli Shrimp Alfredo is tasty and nutritious! Make your simple family gatherings extraordinary with this recipe.

Ingredients:

1 kilo E&L Peeled Shrimp

4 cups of E&L Frozen Broccoli

1 cup of Arla Full-Cream Milk

1/2 cup of Arla Salted Butter, cubed

225g of Fettuccine, cooked

3 cloves of garlic, minced

1 pack of cream cheese, cubed

1/2 cup of Parmesan cheese

Salt and pepper

Directions:

  1. In a skillet, sauté the E&L Peeled Shrimp and minced garlic in Arla Salted Butter. Set aside the shrimp, then add the Arla Full-Cream Milk, cream cheese, and parmesan cheese. Mix until the cheese and milk are well combined and smooth.
  2. In a separate casserole, bring water to a boil, then add the E&L Frozen Broccoli. Simmer for at least 2 minutes and drain the broccoli florets.
  3. Add the shrimp and cheese mixture to the saucepan, then season with salt and pepper. Add the cooked fettuccine. Mix and serve. Enjoy!

Cajun Shrimp

Cajun Shrimp

Level up your usual buttered shrimp with a different taste! This Cajun Shrimp recipe is ideal for your Sunday lunches.

 

Ingredients:

1 kilo E&L Peeled Shrimp

1 tbsp. of vegetable oil

¼ tsp. of cayenne pepper

1 tsp. of paprika

¾ tsp. of dried thyme

¾ tsp. of dried oregano

¼ tsp. of garlic powder

Salt and pepper

 

Directions:

  1. In a bowl, mix all the dry ingredients together and add the E&L Peeled Shrimp. Toss to make sure the shrimps are coated with the powder mixture.
  2. In a pan, heat oil and sauté the marinated shrimp. Add more seasonings if desired. Serve immediately.

Parmesan Fish Sticks

Wanna try something different aside from mozzarella sticks? We got you! These parmesan fish sticks are perfect for snacks!

 

Ingredients:

450g of E&L Tilapia Fillet

1/3 cup of all-purpose flour

1 cup of Panko breadcrumbs

1/3 cup of Parmesan cheese, grated

2 tbsp. of garlic herb seasoning

2 eggs

Cooking oil or spray

Salt and pepper

 

Directions:

  1. Preheat the oven to 450°. In three different bowls, mix the flour, salt, and pepper in the first, then whisk the eggs in a separate one, and in the third, combine the breadcrumbs, cheese, and seasoning blend.
  2. Cut the E&L Tilapia Fillet in 1 inch wide, then coat them with the flour mixture. Next, dip them in egg mixture and toss with breadcrumbs. Make sure the fish fillet is well-coated with the solid and liquid mixtures.
  3. Squirt the baking sheet using cooking spray. Place the fish fillets and bake for 10 to 12 minutes or until golden brown. Serve with tartar sauce and lemon wedges if desired. Enjoy!

Spicy Squid Rings

Spicy Squid Rings

You can never go wrong with squid rings; we all love them too. Spice up your simple dinners with this seafood recipe!

Ingredients:

1 kilo of E&L Squid Rings

80ml of BBQ marinade mix

1/2 cup of sweet chili sauce

2 tsp. of sesame oil

1 tbsp. of oil

1/2 cup of onion red, quartered

1/2 cup of bell pepper red, sliced

1/2 cup of carrot, diagonally sliced

1/4 cup of green onions, sliced

1 tbsp. of oil

Directions:

  1. In a bowl, mix barbecue marinade, sweet chili sauce, and sesame oil then set aside. In a skillet, sauté the onions, carrots, bell peppers, and green onions. Add oil then the E&L Squid Rings. Pour sauce and simmer until thick. Season according to your taste. Serve hot and enjoy!
